Having brunch every day in Franklin has never been easier. Just off 76th Street, the store is hidden in an off-the-beaten-track strip mall. The Honey Butter Cafe opened quietly last week at 7221 South and serves savory and sweet dishes in a modern setting.

A cafe called Open Flame in Greenfield:

Owner/operator Laz Koutromanos, who also owns and operates Open Flame Honey Butter Cafe in Greenfield, is partnered with his sister, Elli Katroumanos, who grew up working in the cafe industry. For as long as we can remember, Laz Koutromanos has operated a dinner cafe. But we have been discussing opening a brunch cafe for years. When I saw the vacant storefront on 76th Street at the end of last year, we took a look at it. The location needed a lot of work, so they disassembled it and started over. The result is a cafe that blends classic elements with fashionable contemporary elements like Edison bulbs, branded neon signs, and eclectic lighting, along with details like bumble bee-themed wallpaper.

Despite the Honey Butter Cafe’s capacity of 150, it is currently operating at one-third of capacity due to safety reasons (cleverly blocking off unused tables as per a menu style sign), says Koutromanos, noting that they have implemented multiple safety protocols including masks for staff and guests, sanitizer stations, cleaning protocols, and serving condiments in individual ramekins.

Here are the menu options 

Customers can order specialty bloody marys (mixed with a house-made mix), mimosas, cocktails, and wine, as well as craft beer and domestic beer. On the menu are scratch-made options, from the honey butter toast ($8), topped with honey butter, bananas, coconut, and seasonal fruit, to rare finds like loukoumades, and bite-size Greek doughnuts. They are available in a classic way: soaked in honey and sprinkled with cinnamon ($7) or dressed up with additions like Nutella and strawberries; honey and goat cheese with candied bacon; or white and milk chocolate and crushed Oreo cookies ($9).

The goal for the cafe, says Katroumanos, is to use Wisconsin ingredients whenever possible, such as freshly squeezed juices and free-range brown eggs sourced locally. Those ingredients are incorporated into a variety of breakfast items, including eggs, hash browns, and toast ($7.50), biscuits and gravy ($9), four egg omelets ($11-$13), eggs benedict ($11) and a variety of skillets, including the “Wisconsin” featuring sliced brats, beer braised onions, cheese curds, and eggs any style ($12).

Guests can also choose classic pancakes, Belgian waffles, French toast, and crepes ($8) or more creative dishes such as lemon coconut pancakes with lemon zest mascarpone and toasted coconut ($13) and s’mores French toast with a graham cracker crust filled with Nutella and topped with toasted marshmallows ($12, courtesy of Honey Butter Cafe).

Classic salads like Caesar, Greek, and Cobb ($9 with protein upgrades like chicken, shrimp, salmon, or filet) can also be found, as can freshly ground, hand-pack beef brisket burgers served on brioche with fries, haystack onions, seasonal fruit, and soup or salad for $10-12. Panini offerings include a Cuban sandwich and panini gyro ($12 each); in addition, fried chicken with honey, mayo, and pickles ($13); and the Fancy Schmancy, a grilled cheese sandwich with gouda, Swiss, and cheddar served with tomato basil soup ($9).
